Muffins makes 12 muffins:Eggs, water, oil. 2, 1/2 cup, 3 tbsp. Optional: add 2 tsp of vanilla extract. Heat oven to 350 degrees F. Wisk eggs, water, oil, and vanilla (if using) in a large bowl. Add baking mix to wet ingredients and stir until completely combined. Pour batter into a lightly greased muffin pan or muffin pan lined with liners. Fill each cup 2/3 full. Bake on center rack for 15-20 minutes or until a toothpick comes out clean. If using muffin liners, let cool before eating to prevent muffins from sticking to the paper. Cake makes one 8 round cake:Eggs, water, oil, vanilla. 3, 1/3 cup, 1/3 cup, 1 tbsp. Optional: for a traditional cake, include 20 drops of stevia or 1/3 cup of sugar. Heat oven to 350 degrees F. Wisk eggs, water, oil, and vanilla extract in a large bowl. Add sweetener (if using) and baking mix to wet ingredients and stir until completely combined. Pour batter into a well-greased 8 round cake pan. Bake for 35-40 minutes or until a toothpick comes out clean. Immediately remove cake from pan once done. While holding the once done.
