This whole chicken roast is a feast to the eyes and palate! Truly dripping with delicious marinade, this is a dish that takes away the spotlight at every party or family gathering. The whole roast chicken needs some marinating time. Therefore, prepping it the night before or a few hours early is a good idea. It’s an uncomplicated recipe where you need to mix the marinade ingredients, coat the chicken with it, pan fry till golden and over-roast for an hour.
Ingredients
for Whole Chicken Roast
- 1-2 Kg Whole Chicken
- 4 Tablespoons of Olive Oil
Marinade Ingredients
- 110ml Olive Oil (half a cup)
- 1/3 cup Barbeque Sauce
- 1½ Tablespoons Barbeque Spice Mix
- 3 Tablespoons of Tamarind Syrup
- 2 teaspoon Yellow Mustard Sauce
- 2½ teaspoons Sriracha hot Chili Sauce
- 3 teaspoons Lemon Juice
- 2-3 teaspoons salt (or as per taste)
- 2 Tablespoons Garlic Granules
- 1 tablespoon Onion Powder
- 1 teaspoon White Pepper Powder
Instructions
Step 1: Keep the chicken aside and mix all the marinade ingredients.
Step 2: Now, cover the chicken all over (outside & under the skin) with ¾ of the marinade. Make sure the sauce marinade coats the chicken uniformly.
Step 3: Next, using foil paper (or plastic wrap) cover the chicken and leave it in the fridge for 2 hours. Then, take the chicken out and allow it to rest in the kitchen’s room temperature for 20-25 minutes.
Step 4: In the meantime, set the oven for preheating at 245°C (470°F)
Step 5: Pour olive oil (2 tablespoons) in an oven-proof saucepan and place it in the stove at medium heat. Once the oil is hot, transfer the marinated chicken (breast-side down) into the pan carefully. Cook for 5 minutes to get the skin charred into a beautiful golden brownish color. Turn the chicken and sear the other side for 5 more minutes. Switch off the stove.
Step 6: Add the remaining olive oil (2 tablespoons) to the ¼ cup marinade set aside earlier. Using a basting brush coat the chicken all over with the marinade once again.
Step 7: Finally, put the chicken (along with the pan) in the middle rack of the preheated oven for an hour. In 60 minutes, the chicken will be perfectly cooked till the middle. Your whole chicken roast is ready! At the time of serving, brush the chicken with the sauce from the pan. You may also serve leftover marinade in a bowl as a dipping sauce.

Tips
- For enhanced flavors, leave the marinated chicken in the fridge for more hours or over-night.
- After taking the chicken out of the fridge, do not leave it at room temperature for more than 30 minutes.
