Beechwood honey's colour varies depending on the season it's produced: if made in the spring, it's auburn and is classified as Light Amber, but if produced in the autumn like this, it's a claret colour which qualifies as Amber in the Pfund colour grading system, or Grade No. 1 Liquid Dark, in the Canadian system. It has a slightly earthy smell, with warm sugary notes with hints of pine resin and caramelized sugar in taste. Since it is raw and unpasteurized, it contains live enzymes, plus antioxidants and minerals, which can all contribute to health, yet it has a very long shelf life and does not need refrigeration even after being opened. Use it on English muffins or toast. Or drizzle it on pancakes or waffles or fruit. Or mix it either into hot drinks or smoothies. Or use it in sauces or marinades.
