Chateau Pavie 2015 Saint-Emilion Grand Cru Classe

Short Description

Limestone terroir of Saint-Emilion, located about 85 meters from the level of the Dordogne, composed of a clay-limestone soil above the limestone with asterias.

The average age of the vines is 43 years, composed of 65% Merlot, 25% Cabernet Franc and 10% Cabernet Sauvignon.

The wine is matured in barrels, depending on the vintage from 70% to 100% new wood, from 18 to 32 months.

It was in the 4th century that the first plantations of vines appeared in the region of Saint-Emilion and more particularly on the slopes of Pavia and Ausone.

It is the largest vineyard of all the classified Grands Crus of Saint-Emilion with 37 hectares including 8 on the limestone plateau, 22 on the clay-limestone coast and 7 at the foot of the coast, composed of gravel and clay and admirably well oriented south.

The average age of the vineyard is 45 years with a grape variety composed of 70% Merlot, Cabernet franc 20% and Cabernet Sauvignon 10%.

The yield is very low: around 3000 liters per hectare for an overall annual production varying between 90 and 100,000 bottles.

The harvest is manual and the wine is aged entirely in new barrels for 18 to 24 months depending on the qualities of the vintage before being bottled.

Promoted to Grand Cru Classé B in 1955, then A, supreme consecration, in 2012.
