Meet the Ancient Grains: Quinoa: A surprising relative of both beets and spinach, this super seed has been growing in the cool, high altitude climates of South America for over 5,000 years. Once a sacred crop of the mystical Inca Civilization, it is now loved by many for its nutty, mild taste. Fact: The Incans referred to quinoa as Chisaya Mama or mother of all grains. Spelt: A member of the common wheat family, spelt originates from Central and Southern Europe. This full-flavored grain has long been a secret ingredient in kitchen masterpieces. Referred to as Farro in Italy, it is enjoyed by many for its sweet, slightly hazelnut flavor. Fact: Unlike common wheat, spelt holds more of its flavor because of its protective outer shell, or hull. Kamut Khorasan Wheat: First introduced in the US as King Tut's Wheat, khorasan wheat was believed to be a souvenir from an Egyptian tomb, but its true history remains a mystery. From soups to side dishes, this rich, buttery grain now provides energy from modern-day queens and pharaohs. Fact: Khorasan wheat tends to be 2-3 times larger than most common, modern-day wheat. 36 grams whole grains per serving (At least 48 g of whole grain recommended daily.).
