The Porcelana cocoa is considered the Criollo among the Criollos and is one of the noblest cocoa varieties in the world. In addition to its typical nutty aroma, the Porcelana is characterized by the fact that it has almost no sour and bitter flavors. This type of cocoa is found almost exclusively in Venezuela.
Some of the best-known manufacturers of fine chocolates use Porcelana cocoa from the same plantations from which we obtain our cocoa. Among them are Domori, Pierre Marcolini, Valrhona and Amedei. Accordingly, the annual harvest is fought over and we are proud to have "captured" a small part for them. Therefore, for the Porcelana is especially true: only while the scarce supply lasts.
Porcelana Aroma
When processed into chocolate, Porcelana cocoa delivers a long-lasting chocolate aroma, often with slight hints of spice. Compared to other fine cocoas, Porcelana has a slight nutty note. Fruity, sour and bitter notes, on the other hand, it has very little.
Porcelana cocoa variety
The Porcelana cocoa is a pure Criollo cocoa. This variety is one of the rarest of all and is found almost exclusively in Venezuela. Besides the special aroma, the porcelain-like color of the fresh cocoa beans is striking. This color gave the cocoa its name, even though the beans have the typical brown of cocoa after processing. The rarity and the very small yield of a Porcelana cacao tree are the reason for the high price. Only 1 in 1,000 blossoms actually bear fruit and the tree, which is susceptible to disease, can only be planted in mixed or forest cultures and is unsuitable for pure cocoa plantations.
Porcelana cultivation - location
Some of our cacao comes from a small plantation on the northern slopes of the Andes, south of Lake Lago de Maracaibo in western Venezuela.
