Have you ever had fortune cookies? Most may think that this is a Chinese treat but in fact, it originated in California. Fortune cookies are crisp cookies made from sugar, vanilla, flour, and sesame oil. They usually have a piece of paper inside that is called a "fortune". The fortune or message can range from popular Chinese proverbs and phrases or a list of lucky numbers. Fortune cookies are most often served as desserts in Chinese restaurants across the United States, but not in China.
How to make Fortune Cookies
Fortune cookies might be a bit tricky to make since it is pertinent that the cookie batter spreads evenly. Do not use the back of a wooden spoon, but instead carefully tilt the baking sheet back and forth. You can wear a pair of cotton gloves to make it easier for you to handle and shape the cookies. Here is a recipe that yields about 10 cookies.

Ingredients
- 2 Egg whites
- 1/2 tsp pure vanilla extract
- 1/2 tsp pure almond extract
- 3 tbs vegetable oil
- 8 tbs all-purpose flour
- 1 1/2 tsp cornstarch
- 1/4 tsp salt
- 8 tbs sugar
- 3 tsp water
Preparation

On a piece of paper 3 inches long and 1/2 inch wide, write fortune messages. Next preheat the oven to 150°C and grease two 9-X-33 cm baking sheets.

Lightly beat the egg white, flavored extracts, and vegetable oil in a medium bowl until frothy and soft peaks form.

Carefully sift the dry ingredients (flour, cornstarch, salt, and sugar) in a separate bowl. Then stir the water into the flour mixture.

Combine both wet and dry mixtures and stir until you have a smooth batter. It should be runny but firm enough to remain on the spoon.

Now place equal tablespoons of the batter onto the greased baking sheet 3 inches apart. Carefully tilt the baking sheet back and forth to form even circles - about 4 inches in diameter.

Bake at 150°C until the outer 1.25 cm of each cookie becomes golden brown, and they release from the baking sheet easily.

Quickly remove them with a spatula and flip them over your hand. Place the message in the middle and begin to form the cookie. Fold it in half, then carefully pull from the edges over the rim of a glass or muffin tin. Place the completed cookie in the muffin tin or glass to hold its shape. Repeat with the rest of the cookies until you are all finished.
