The ORIGIN our Matcha teas Our Matcha is organically grown in Aichi in southern Japan - one of the traditional areas in which the Matcha culture has been treasured for centuries. This region has been spared the consequences of the nuclear accident in Fukushima, Japan, in the far north. The magnificent Matcha farms have belonged to generations of the same family, within which the knowledge and art of cultivation has been transmitted from old to young. PROCESSING our Matcha When picking the tender leaves from the stems and branches, they have to be carefully removed. Subsequently, the crop is dried gently and slowly ground in granite stone mills. This grinding produces less heat than the heavy-duty industrial mills so that the various nutrients and the intense colour of the leaves is preserved. QUALITY of our Matcha Before harvesting, the tea plants are shaded for 25 days in two stages, whereby the formation of chlorophyll is amplified in the leaf and wins the green tea nutrients and taste.
