Meijer Moist Select Muffin Mix Bakery Style, BlueberryENRICHED BLEACHED FLOUR (BLEACHED FLOUR, MALTED BARLEY FLOUR, NIACIN, iron, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID), SUGAR, BLUEBERRIES (PACKED IN EXTRA LIGHT SYRUP), PARTIALLY HYDROGENATED VEGETABLE SHORTENING (CONTAINS SOYBEAN OIL), LEAVENING (BAKING SODA, SODIUM ALUMINUM PHOSPHATE), DEXTROSE, SALT, ARTIFICIAL FLAVOR, XANTHAN GUM.Easy Baking: 1. Preheat: Preheat oven to 400 degrees F. Grease muffin pan (or use paper baking cups) . 2. Drain: Drain blueberries; rinse thoroughly with cold water and set aside. 3. Mix: Empty large muffin pouch into bowl. Break up any lumps with a fork. Add 1 egg and 3/4 cup of water to mix. Stir until moistened (about 50 strokes; batter will be slightly lumpy). Do not use an electric mixer. Gently fold in drained and rinsed blueberries. 4. Spoon: Spoon batter into muffin pans filling no more than 1/4 inch from top for jumbo muffins or 2/3 full for 12 large muffins. Gently sprinkle topping (small packet) over muffins before baking. 5. Bake: Bake at 400 degrees F for: 8 jumbo muffins: 23-27 minutes; 12 large muffins: l8-22 minutes. Cool 5-10 minutes. Gently loosen muffins and remove from pan. Serve warm. Helpful Hints: Make sure blueberries are thoroughly rinsed and drained. Repeat rinsing procedure several times, making sure no blueberry juice gets into the muffin batter. Adding liquid from blueberry can will result in blue or blue-green muffins. Moist, delicious muffins filled with real plump, ripe blueberries! Add an egg and water. Quality assured. - Fred Meijer.
