Heat enchilada sauce in small skillet until steaming. In another skillet, fry tortillas, one at a time, a few seconds in hot shortening. Drain. Dip tortillas in green enchilada sauce. Fill each tortilla with diced onion and grated cheese and roll. Place seam side down in shallow baking dish. Cover with remaining green enchilada sauce and grated cheese.
