In 1905, Joseph Grellier invented the round, golden-brown biscuits to spoil his village of Saint Michel. He owes his success in part to his wife Constance; she had the idea to give the Galettes the Ladies from the city for sale who came to the coastal beaches for bathing. The Biscuiterie was opened in 1919 because of the success of the brand's founder. As a brand symbol, he had chosen a hen that stands sensually for rural France and good products. He continues the French biscuit tradition and reinvents it, especially with the Roudor, the Sables de Retz or the delicious Madeleines de Commercy.

To this day, St Michel is an independent French family business and proud of it; he has set himself the task of to pass on the taste of good to future generations of families.
