Directions Prep time: 15 minutes/cook time: 20 minutes/ready in: 35 minutes.Prep:1. Preheat oven to 375 degrees F.Cooking instructions: Mashed potatoes:1. Peel and cut into 3/4-1 inch chunks.2. Place in sauce pan filled with water and bring to a simmer, cover and cook until potatoes are tender, about 10 minutes from boiling.Steak:1. Heat frying pan on stove on medium-high heat with 1 tablespoon of olive oil. While pan is heating, pat steak dry with a paper towel and season each side with salt and crushed peppercorns. Add steak to pan. Wash hands after handling raw meat.2. Cook to desired doneness and internal temperature: these times are a guide as steak thickness can vary. Medium-rare - 3-4 minutes each side (120-130 degrees F) , medium - 5-6 minutes each side (130-140 degrees F), medium-well - 7-8 minutes each side (140-150 degrees F). While steak is cooking, start steps 4, and 5.3. Transfer the steak to a plate to rest; cover with aluminum foil.Broccoli & cauliflower:1. Garlic - finely chop.2. Place broccoli and cauliflower florets on a foil lined sheet tray and top with 2 tablespoons of olive oil and half of the chopped garlic. Season with salt and pepper to taste.3. Toss mixture and spread into a single layer. Roast in oven for about 15-20 minutes or until vegetables are browned and softened.Check potatoes:1. When potatoes are tender, drain well, and return to pot. Mash until soft. Add up to 1/2 of the cream slowly until you reach desired thickness. Stir in chives. Add salt and pepper to taste.Sauce:1. Chop chives.2. Bring used steak pan to medium heat and add 1 tablespoon olive oil.3. Add diced onion and remaining chopped garlic. Saute until onion is translucent, about 3-4 minutes.4. Add remaining cream and stir to combine. Gently simmer to reduce, about 4 minutes on medium heat. Stir in blue cheese until it melts.Serve: Slice steak and divide amoung two plates, top with sauce.
