One of the oldest blue cheeses, Gorgonzola Dolce was discovered by accident when a young cheese maker neglected his culinary responsibilities to spend more time with his beloved (as the legend goes) . It is made from milk of cows that spend their lives grazing in Alpine pastures, and the blue veins are created by injecting air into the ripening cheese, allowing it to age naturally.
