Not too hard and not to mild. October 28, 2014 Rated 5 out of 5 by Truffle I LOVE this cheese! I'm really surprised to see the 1 * review of this cheese as it's become a staple for me! I first ate Manchego impregnated with chilli (yum) and now use it chopped up small in salads/grated into mashed potato - try it with Boursin for the best cheesey mash ever! Manchego is a very strong cheese so a little goes a long way. Try it, you might like it, but bear in mind how I use this cheese. The salad I add it to comprises: red, yellow and orange peppers, chopped firm apple, chopped raw mushrooms. The cheese works well with olives. Enjoy! It's a sheep's milk cheese, making it quite dry, nutty and salty and this is a good quality example which I can recommend - I've enjoyed it for years.
