Especially when baked in tin foil with a dash of olive oil, sliced Vitoria tomatoes and some ground pepper. Served with some cut salad and low fat dressing it makes a great low calorie meal. As any fule no, that's how Molesworth described it and this superb cod fillet, too, is worthy of similar high praise. It's affordable, versatile and, being skinless and boneless, it's the easiest thing in the world to prepare. The shapes and sizes can be a challenge; if you cut them, make sure the resulting bits are the same size for even cooking. I've tried the following: 1. dust the fillets with seasoned flour and shallow fry in butter or light oil for an almost zero-calorie option; serve with boiled potatoes and a dressed salad 2. slam them in the oven on a bed of leeks and a bit of stock for 15 minutes to bake; serve with mashed potatoes 3. braise them in a tomato sauce; serve with pasta 4. they go really well in a risotto; just lob chunks of the cod in right at the end, as they take next to no cooking.
