The salmon is succulent and flakes off the fork. Portions are a good size. It's lovely cooked just on its own, without the addition of herbs as the smoked flavour really comes through. I tend to serve with crushed new potatoes and tenderstem broccoli. It's fully flavoured and the hint of smoke in the background just gives it an extra dimension. I normally season it with whatever herbs come to hand - JS Italian herbs work well, as does thyme - drizzle it with some olive oil and lemon juice and/or pastis/white wine, then wrap it in foil and bang it in the oven at 350F/180C for about 20 to 25 minutes, serving it with a simple dressed green salad and boiled new potatoes.
