Western Family LentilsLentils.Directions Lentils require no soaking or salt for preparation. Follow these simple steps: 1. Rinse: drain. Transfer to stockpot or steam-jacketed kettle. 2. Add at least twice the amount of water as lentils. 3. Cover: Bring to a boil. Reduce heat, simmer: 20 to 15 minutes - Lentils for salads; 30 to 40 minutes - Lentils for vegetables and main dishes; 45 to 60 minutes - Lentil soups or purees. Note: If salt is to be added for lentils, add it when they are nearly tender for it toughens the skins and slows cooking. Although the most modern equipment is utilized in the cleaning of these products, as with any natural product, there is the possibility of some foreign matter being present. Customers need to thoroughly sort any foreign matter that may be present. All product should be thoroughly inspected and washed prior to cooking or consumption.
