Short Description
It is a white champagne made from a single piece of vines located on the famous Coteau d'Aÿ, classified Grand Cru at the top of the quality hierarchy of champagnes, a piece of vines planted exclusively with Pinot Noir grapes.
It is a parcel, mono-cru and single-varietal champagne.
The dress is shiny gold.
On the nose and in the mouth: persistence of flavors and aromas of small red fruits such as wild strawberries, blueberries or burlat cherries. The second attack is acacia honey with a discreet pronouncement on the viennoiserie. The finish is long with a very nice minerality.
Food / wine pairing: to taste around 10 to 12 ° C with oysters from Marennes or Oléron and Belon, shellfish from the Atlantic, blue lobsters from Brittany. Even better with white meats, flavored with morels or chanterelles and truffles. Wonderful on a citrus tart Tatin or on vanilla / chocolate ice cream.
