Dehydrated pineapple are prepared from the flesh of the pineapple which has been peeled, cut to desired shape and processed by hot air dehydration preceded by sulfating, calcium firming and syruping. The product is of a uniform bright yellow color and possesses a distinct and normal flavor characteristic of properly processed mature pineapple. It is free of mold and infestation.
