Truly authentic. Original recipe for 20 years. Stone-ground flour. Source of fibre. The authentic organic integral sourdough bread. This bread is exactly like the famous bread of the people that was made in France before the Revolution. It is made with organically grown whole wheat that is lightly stone ground, and yeast from naturally fermented dough. The bread is called integral because it includes all the nutritional elements of wheat (protein, fibre, vitamins, mineral salts, trace minerals, essential fatty acids), which are mostly eliminated in the industrial refining process used to make white flour today. The kneading, done at a gentle rhythm identical to the hand mixing of the baker in days gone by, the long, natural fermentation, and the traditional way it is baked, give this bread nutritional qualities and exceptional flavours.
