Spray unheated skillet or griddle with cooking spray; then heat over medium-high heat or electric griddle to 375 degrees. Or heat skillet over medium-high heat or griddle to 375 degrees, then grease with vegetable oil or shortening. (Surface is ready when drops of water sprinkled on it dance and disappear.) 2. Stir pancake mix and cold water with fork or wire whisk until smooth (batter will be thin) (For thicker pancakes, stir in additional mix). Pour slightly less than 1/4 cup batter onto hot skillet for each pancake. 3. Cook until bubbles break on surface and edges just begin to dry. Turn; cook about 1 minute or until golden brown. High Altitude: No changes. Waffles: 1. Spray unheated waffle iron with cooking spray; then heat waffle iron. Or heat waffle iron; then grease with vegetable oil or shortening. 2. Beat 2 cups pancake mix, 1-1/3 cups milk and 2 tablespoons vegetable oil with fork or wire whisk until smooth. Pour onto center of hot waffle iron. 3. Bake about 5 minutes or until steaming stops. Remove carefully. Makes six 9-inch waffles. High Altitude: No changes. Tips: To Keep Pancakes Warm: Stack between paper towels; place in warm oven. To Freeze Pancakes or Waffles: Stack between waxed paper; wrap tightly. To Reheat Pancakes: Microwave on high. Or place single layer on ungreased cookie sheet; cover tightly with aluminum foil. Heat in 375 degrees oven about 10 minutes. To Reheat Waffles: Heat in toaster. Or place in single layer on ungreased cookie sheet. Heat in 400 degrees oven 5 to 7 minutes, turning twice.
