Stir well and bring to a boil. 2. Add 2-3 lbs. pre-cooked chicken and/or sausage, or 2 lbs. seafood. * 3. Cover and bring to a second boil. Reduce heat and simmer for 15 minutes. Serve over cooked rice and enjoy! *For seafood gumbo: after bringing to second boil, cook 3-4 min. Remove from heat (add oysters if desired) ; let stand for 30 min. Variations: uncooked chicken may be combined with gumbo mix and water. Gumbo is ready to serve when chicken is cooked. Andouille, smoked sausage, or okra may be added.
