Del Sur BunuelosCorn Starch, Natural Modified Tapioca Starch, Dextrose, Salt (sodium Chloride) And Leudants (sodium Bicarbobnate)To prepare you will need: 400 g of Bunuelos Del Sur blend; 4 cups of fresh ground cheese, preferably a hard dry cheese (we suggest cotija or costeno) ; 1 egg; water or milk as required; salt to taste. Bunuelos Del Sur are easy to prepare and delicious, simply follow these steps: In a large bowl blend the cheese with Bunuelos Del Sur blend. This can also be done in a dry mixer at slow sped. Slowly add the egg and then add the water or milk until a soft dough is formed. When the dough is soft and moist (not sticky) it is ready. Preheating the oil & frying tips. In a pot pour plenty of oil (about 10 cm/4 inches) and preheat at high until 145 degrees C/293 degrees F is achieved. Lower the temperature to medium. Place a small ball of dough in the oil. If the dough rises in less than 10 seconds then lower the temperature. If the dough takes more than 15 seconds to raise then more heat is needed. The ideal is for the dough to rise in 12-15 seconds. To properly maintain temperature, place the bunuelos one at a time. Place enough bunuelos in the pot to cover the surface one floating. Remember that bunuelos sink to the bottom at first and then rise to the top; they begin to roll and expand on their own. Shape the dough into small balls (30 g-50 g approximately) and place carefully into the oil. Bunuelos will be ready in about 12 to 15 minutes. A golden brown or reddish colour is achieved. Remove the bunuelos and place them on a dry paper towel to absorb the excess oil. Serve warm. Enjoy delicious Bunuelos Del Sur with a great cup of coffee or hot chocolate.
