Filling for 9-in pie. Bold flavor. Sets up easily. 15 minute prep. Directions Instructions:Needed:2 egg yolks*. 1/3 cup cold water. 2 cups very hot water. 1 tbsp butter. One 9-in prepared pie shell. In a 2-qt saucepan, combine 2 slightly beaten egg yolks, 1/3 cup cold water and contents of pie filling mix packet. Stir in 2 cups very hot water and cook over medium heat, stirring constantly. When bubbles first break the surface and filling thickens, about 5-7 minutes, continue stirring for 30 seconds. Remove from heat. Do not overcook. Stir in 1 tbsp of butter. Cool 5 minutes, stirring twice. Pour into a prepared, cool 9-in pie shell. Refrigerate pie up to 3 hours or until firm. Store leftovers in the refrigerator. Yields 8 servings. *reserve egg whites for meringue, if desired. Meringue topping instructions:1. Preheat oven to 350 degrees F. 2. Beat 2 room temperature egg whites in a clean metal bowl at medium speed with a wire whip attachment until soft peaks form. 3. Slowly beat in 1/3 cup sugar, and continue beating until stiff peaks form. 4. Top filling in pie shell with meringue, sealing to the edge of the pie crust**. Bake at 350 degrees F for 12 minutes or until golden brown. 5. Cool pie before serving. ** For best results use pastry crust - prepared graham crust may not hold together after baking meringue.
