Nutritious mung beans are quick-cooking and full of fiber and iron. Their mellow, earthy flavor is perfect for soups, curries and dips. Add mung bean sprouts to salads, sandwiches and wraps for a pleasant crunch and nutritional boost. Directions Stovetop instructions:Sort and rinse 1 cup mung beans. Place in a medium pot with 3 cups water and bring to a boil. Reduce heat to medium-low and cook until tender, about 25 minutes. Add more water as needed to keep beans covered with water while cooking. Makes 4 servings (about 3 1/2 cups) . Sprouting instructions:Sort and rinse 1/3 cup mung beans. Place in a bowl or jar with 1 cup cool water. Cover with a clean cloth and let soak at room temperature for 8 to 12 hours. Drain and rinse beans. Cover and let sit for another 8 to 12 hours, then rinse again. Repeat for 2 to 3 days for little sweet sprouts, or 4 to 5 days for bigger sprouts. Store in a cool, dry place to preserve freshness.
