Red lentils are rich in fiber and provide a wealth of vitamins and minerals, including iron and zinc. Directions Stovetop instructions:Sort and rinse 1 cup red lentils. Place in a pot with 3 cups water and bring to a boil. Reduce heat to medium-low and cook until tender, about 15 minutes. Add more water as needed to keep lentils covered with water while cooking.
