Deep/Pan Frying: (Chicken, shrimp, scallops, fish, onion rings, eggplant, zucchini, cauliflower) . For best results heat cooking oil to 375 degrees. Prepare batter by mixing one part Batter Mix with one part water; let stand 2-3 minutes. Cut food into serving size pieces. With a fork dip one piece at a time into the batter; then place into the hot cooking oil. Cook until golden brown. Larger pieces of chicken may be fried at 350 degrees, turning occasionally. For shorter cooking time, chicken may be parboiled before frying. To pan fry place pieces in hot cooking oil and brown evenly on both sides. Baking: Make sure food is well coated. Prepare a shallow well greased baking pan. Preheat oven to 400 degrees. Place battered chicken skin side up into pan and bake 40-50 minutes. For fish place battered fish skin side down in the pan and bake 10-25 minutes. Fish is done when it flakes easily with a fork. When the mix is added to a broth, it will make a delicious gravy.
