October Harvest was born to be a great oil, without economic constraints (the yield is very low): it is produced in limited quantities, in a specific period of the year - the month of October - when the olives are still green and they contain only a small amount of precious oil. In order to obtain the highest quality possible, the olives are picked and cold pressed in the same day. The aromatic content of October Harvest is superb: intensely fruity, with a strong bouquet of fresh olives and hints of fresh grass, artichoke and wild thistle.
