Baking: Yields about 22 cookies. 1. Preheat oven to 375 degrees F. (If using an insulated cookie sheet, heat oven to 400 degrees F). 2. Place about 1/2 of the cookie mix into bowl. Add soft butter and egg. Using an electric mixer, beat on low for about 30 seconds. Add remaining cookie mix and beat until stiff dough forms - about 1 minute. 3. Drop heaping teaspoonfuls of dough onto ungreased cookie sheet, about 2 inches apart. 4. Bake 8-9 minutes for chewy cookies, 10-11 minutes for crispy cookies. Wait 2-3 minutes before removing from cookie sheet. Large Cafe Style Cookies: Yields about 12 cookies. 1. Prepare oven and dough (steps 1 & 2), then place heaping tablespoonfuls onto cookie sheet, about 3 inches apart. 2. Bake 10-11 minutes for chewy cookies, 12-13 minutes for crispy cookies. Wait 2-3 minutes before removing from cookie sheet. High Altitude: Bake at 25 degrees F lower temperature for all cookie sheets.
