Our kaniwa comes to us from El Altiplano, an inspiring community-based company that works directly with over 160 producers of native grains in the high altiplano of the Peruvian Andes. The company provides a seed bank, training, organic certification, low interest loans, profit sharing, and a secure market at fair prices. El Altiplano has made a significant impact in improving the quality of life of their producers through the use of organic farming techniques to increase yields and through the introduction of a dairy production program, offsetting some of the serious challenges arising from climate change in the region. Kaniwa, a species of goosefoot closely related to quinoa, is indigenous to the Andes. It can resist low temperatures and high altitudes and is considered more resistant than any other grain crop thus providing a safety net for subsistence farmers. Kaniwa flour is a protein powerhouse, providing an incredible, earthy taste that comes to life in breads, pancakes, and muffins. This flour is great on its own but performs best when combined with a less protein rich grain such as rice or corn to produce lighter baked goods with a warm nutty flavor. Peru is home to one of the most important centers of genetic diversity in the world. At the time of the Spanish conquest, the Incas cultivated almost as many species of plants as the farmers of all Asia or Europe. Today the ancient influences still persist, and unique and highly nutritious grains and beans are now available to the outside world.
