Our organic Purple Corn comes to us from Topara Organica who organically cultivates and processes many indigenous crops, such as maiz morado, lucuma, ajis (chili peppers) , huacatay (black mint), yuca and sweet potato. They have made it their mission to cultivate and produce products that represent the rich culinary traditions of Peru while restoring their land and strengthening their local community. Topara is a leader in their community and throughout Peru in organic cultivation. To this day they have the only certified organic nursery in the country. Maiz morado, or purple corn, has a deep purple color and has long been used by people of the Pruvian Andes to color food and beverages, such as Chicha Morada, a popular Peruvian drink. Depictions of this corn have been found at archeological sites of the Mochica culture dating back 2, 500 years. Although purple corn flour is an equivalent substitution for yellow corn flour or meal in baking and food preparation, it is unique in that it contains anthocyanin, a powerful antioxidant and anti-inflammatory that has been proven to reduce the risk of cardiovascular disease and abnormal cell growth. The anthocyanin content found in purple corn is what gives the corn its deep purple color, and is higher than the level found in blueberries.
