La Bio Idea Organic Tomato Puree (22%) Tomato puree is made by concentrating tomato flesh. This is done in a vacuum with a gentle heat. The boiling point of water in a vacuum is slightly lower than normal so the flesh actually cooks at about 40 degrees. In this way, concentration takes place quicker and without loss of flavour. La BIO IDEA tomato puree is double concentrated, meaning it contains 22% dry material. It is particularly important to use organic produce in concentrated products. In normal products all the residues are concentrated as well. Tomato puree is made by concentrating tomato flesh.Long Description
