Cicerchia of Serra De' Conti 500G li> The Cicerchia of Serra de; Conti - Slow Food The grass pea (Lathyrus sativus) is a leguminous plant to grain and comes from an annual herbaceous plant, quite similar to that of chickpeas. Its origin is very ancient and comes from the Middle East; the Greeks called it Lathiros, for the Romans it was Cicerula. In the last decades, its production is progressively reduced until they almost disappear. Like all legumes, has interesting nutritional characteristics, both for the high content of proteins for both the low amount of fat. Good presence of vitamins, calcium, phosphorus and fiber. In the territory of Serra de; Conti, on the hills of Verdicchio, is grown with low environmental impact techniques for a variety particular chickling vetch: petite and angular, with colors ranging from grey to spotted brown, with a skin a little leathery and a flavor less bitter than the other varieties. Does not need a long time of soaking (only 8 hours!) and only 45 minutes of cooking. These features make it appreciable to the taste, and fit nice recipes both traditional and innovative. Every year, at the end of November, takes place in Serra de; Conti, among wine cellars and taverns of the historic centre, the Feast of Cicerchia, a joyous event for all gourmets who want to rediscover ancient flavors.
