In July and August, incisions are made in the bark of the trees and a creamy sap begins to flow. This bitter sap hardens to a sweet, crystalline white when it comes into contact with the hot, dry, Sicilian air. It is then harvested by hand from the trees using a special knife. The various environmental elements must all come together in order to create this miracle of nature.Long Description
