Trappeto Di Caprafico white Wine Jernare Pecorino Doc Bio - 2018 750ml The White Wine Jernare Pecorino DOC BIO Trappeto di Caprafico is produced from a selection of grapes harvested in early September in a very scrupulous. The harvesting is done by hand in the early hours. The grapes are then subjected to stripping, followed by an immediate drop in temperature down to 4 ┬░ C. The destemmed is then inserted into insulated and chilled steel tanks to carry out the technique of cold maceration (cold maceration of the grapes) for a time interval of about 6 hours. This is followed by the soft pressing and the subsequent low-temperature maintenance to facilitate the decantation and elimination of turbidity in suspension. Fermentation is always done at controlled temperature (15 ┬░ C) in steel tanks. For the entire time in steel (approximately until February), the wine remains at a temperature of about 10 ┬░ C to preserve the aromatic heritage. Aroma: the nose opens with a vast olfactory landscape, ranging from orange flowers that are followed intense sensations of citrus, lime, green apple with a final herbaceous. Taste: the palate is full-bodied, fruity, mineral, with pleasant freshness and a slightly bitter aftertaste.
