Ingredients

  • 3 eggs
  • Acacia leaves (1/4 cup)
  • Fish sauce (1 teaspoon)
  • 1 Thai red chili (optional)
  • Salt
  • Olive Oil

Instructions

Prepare the Eggs, Acacia leaves and Chili Crack the eggs in a medium-sized bowl and whisk them until frothy. Wash the acacia leaves thoroughly. Be careful of the thorns. Collect the thin stem and leaves. Chop them finely. Also, thinly slice the Thai red chili.

Cook the Thai Green Omelet

  • Add the chopped acacia leaves, red chili, fish sauce, and salt to the whisked eggs. Mix them together.
  • Heat the oil in a non-stick pan.
  • Pour the egg mixture into the hot oil and let it cook for 2 minutes on one side. Then, flip the omelet and cook the other side for 2 minutes. Turn off flame and serve hot.
