Coconut Crepes with Pear Filling: Crispy Creamy Breakfast

The crispy nutty coconut crepes with gorgeous bright yellow cinnamon-flavored sweet pear filling are a mouth-watering combination. Ingredients

For coconut crepes, you’ll need

  • 2 cups of flour
  • ½ cup of desiccated coconut
  • 3 tablespoons of brown sugar
  • 1 egg
  • 2 teaspoons of vanilla extract
  • 1½ cup of milk
  • Oil (for greasing the pan)

For pear filling, you’ll need

  • ½ can of pears (200-250 grams) (diced)
  • 2 cubes of butter
  • 1½ tablespoons of maple syrup
  • 1 tablespoon of brown sugar
  • ½ teaspoon cinnamon powder
  • 1½ tablespoon of pear juice from the can (or water) (use as per needed)

Instructions to make the Pear Filling & Coconut Crepes

Prepare the Pear Filling

  • Heat a non-stick pan on the stove over medium flame. Add the butter cubes and let them melt.
  • Now, add the diced pear pieces and stir fry for 2-3 minutes.
  • Next, add the maple syrup and brown sugar. Adjust the flame to medium-high. Cook for 5-6 minutes until the pears are tender and have a golden caramelization.
  • Turn off the stove and transfer the pears to a bowl to cool down.
  • Once the pears are at room temperature, put them in a blender. Add the cinnamon powder and pear juice. Blend into a smooth sauce.

Your pear filling for the coconut crepes is ready. Take it out in a bowl and keep aside.

Make the Coconut Crepes

  • Start by mixing the dry ingredients first. Take a large bowl and add the flour, desiccated coconut, and brown sugar. Mix it all up.
  • Next, make a small hole in the middle of the dry mixture. Add the egg in the hole. Also, add the vanilla extract in the egg. Using a fork, whisk the egg and vanilla extract with the dry mixture.
  • Now, continue whisking by adding the milk little by little. After 2-3 minutes the crepe batter is ready.
  • Place an oil-greased pan on the stove over medium heat.
  • Pour a ladle of coconut crepe batter. Spread it all over the pan to form a thin circle. Cook for 1-2 minutes and flip.
  • Cook the other side for a couple of minutes. Take out on a plate. Repeat the process for the rest of the batter.

Roll up the Coconut Crepe with Pear Filling

  • Spread out the coconut crepe on a plate.
  • Apply a generous amount of the pear filling all over the crepe.
  • Now, start rolling the crepe from one side to the other. Seal the ends.
  • Sprinkle some powdered sugar on top and serve.

Enjoy your coconut crepes with pear filling at room temperature.

Tips

An easy trick to crisp up the edges of the crepes is to add a little butter to the edges while pan-frying the crepes.
