Ice Cream Layered Cake

Ingredients

  • Store bought pound cake in tin foil case
  • 4 scoops chocolate chip ice cream
  • 6 scoops vanilla ice cream
  • 4 chocolate chip cookies
  • Handful of chopped smarties and some whole for topping
  • 1/4 cup chocolate chips
  • 2 cups chopped milk chocolate
  • 1/4 cup coconut oil

Method

  1. Take out the cake from its tin and cut it horizontally into 3 sections.
  2. Save the tin and line it with cling film, large enough so that it can still comesout of the tin.
  3. This will help to take out the cake when you're done.
  4.  Put the bottom layer of the cake back in the tin.
  5. Top with 4 scoops of vanilla ice cream and spread until smooth.
  6. Add 2 crushed cookies.
  7. Add the middle layer of the cake and top with chocolate chip ice cream and sprinkle some chopped smarties and more chocolate chips.
  8. Put on the top most layer of the cake and spread the remaining 2 scoops of ice cream. Spread evenly.
  9. Cover with the extra cling film on the sides and put in the freezer.
  10. Meanwhile, make the chocolate shell by melting the milk chocolate and add coconut oil to it. Let it cool for a while. Take out the cake and pour over the melted chocolate and top with smarties and remaining crushed cookies.
  11. Put back in the freezer to set.
  12. To take out the cake. (Just pull it out of the tin using the extra cling film and serve immediately)
